As the leaves began to lazily drift to the ground in lavish orange and copper hues and the warm summer breeze hinted at a crisp chill, it dawned on me that there is a dark void in my quietly growing blog post library. It is a particularly serious subject that now seems to be a right of passage for real food bloggers: the pumpkin recipe. A real food blog without a pumpkin recipe in October is like Seattle resident without an umbrella. It just doesn’t happen.
The Quest for Portable Pumpkin
Finding an original way to use pumpkin would prove to be a taller order than I expected. There is an infinite array of pumpkin pies, soups, stews and even Starbucks-killing pumpkin spice latte recipes tantalizing our taste buds, so where could I possibly contribute? The answer came to me when I recently faced the need to pack several pounds of homemade Autoimmune Paleo Protocol (AIP)-friendly snacks that could keep me from crashing during an exhausting 4-day conference in Boston where I would be presenting.

If you’re not familiar with the Autoimmune Paleo Protocol, it is a restrictive yet delicious Real Food diet designed to manage autoimmune conditions through extremely nutrient-dense and low inflammation foods (for more information, visit The Paleo Mom). Being that all conference food would be off-limits and I couldn’t exactly present from my hotel room, I couldn’t rely entirely on room service and my Paleo On The Go Autoimmune Paleo meals for sustenance.
Whatever I made had to be light and easy to stash in the small suitcase otherwise known as my purse. Then one fateful day, I found myself drooling over a recipe for pumpkin pie chia seed pudding from Real Food RN and wishing I could take that to go. Suddenly…the answer was clear.
Enter…dehydrated pumpkin pie leather.

Yeah, you heard me. Pumpkin pie…in leather form (or jerky, if you prefer). It’s chewy. It’s sweet. And it packs a whole lotta pumpkin pie-fulness into a compact, crunchy bite. Thankfully I no longer have an addictive tendency towards sweets, but after trying this, I had to hide the rest of the bag from myself and my handsy family so I wouldn’t go to Boston empty-handed. It’s that good.
But, you don’t care about any of that. You just want portable pumpkin pie. So impatient. Here you go!
Want Autoimmune Paleo-friendly pumpkin pie to go? With this delicious dehydrated AIP pumpkin pie leather, you can bring the taste of fall wherever you go!
Ingredients
- Food dehydrator (I adore the Excalibur)
- 1 16 oz container organic pumpkin puree OR 2 cups homemade pumpkin puree via LiveSimply
- 1/2 cup shredded coconut
- 1 cup organic canned coconut milk or homemade coconut milk via Tasty Yummies
- 1 1/2 tbsp organic Grade B maple syrup
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1/4 tsp clove
- 1/4 tsp alcohol-free vanilla extract
- 1 pinch mace
- 1 dash sea salt
Instructions
- Stir all ingredients in a mixing bowl. Image may be NSFW.
- Spread the mixture on a fruit leather sheet or parchment paper on a dehydrator rack. Try to spread to about 1/4 inch or less thickness or else it will dry unevenly. Image may be NSFW.
- Dehydrate for 6-8 hours at 135 degrees.
- Remove and carefully peel from the parchment paper. Will last in the fridge for 1 week. Image may be NSFW.
- Hide it from your wife, hide it from your kids, and yourself or it might pull a vanishing act before nightfall!

NOTE: If you’re not on AIP, you can round out the pumpkin pie flavor by using:
1 ½ tsp pumpkin pie spice blend OR adding:
¼ tsp allspice
¼ tsp nutmeg
This recipe was adapted from Common Sense Home to be AIP-compliant. I hope you enjoy whipping up a batch of my dehydrated pumpkin pie leather, my first of hopefully many fall pumpkin recipes! This is 100% kid and Judgey Bear APPROVED, and would make an amazing snack for long car rides or daycare since it’s fun to hold and chew on with silly little hands.
